Brine the chicken with pepper,bay leaf,salt ,garlic and cold water and leave it for over night or minimum 3 hrs.
If we roast the brined chicken after proper drying,the chicken will be more crispier.
Peel off the skin of the dried chicken,do not let the skin tear apart.
Now spread olive oil on the chicken also spread salt and pepper inside and outside the chicken
Grind coriander leaves,lemon zest,lime.coriander powder,honey,pepper powder,onion and olive oil well.
Insert this spice mix into the chicken using a spoon and spread it inside as well as outside the chicken too
Inside the chicken drop half of lime and half og the garlic paste.Stuff it with left lime.
Coat baking tray with olive oil
Now transfer the stuffed chicken to baking tray.
Pre-heat oven to 205 degree celcius and keep it for 30 mins.
Now add the chicken stoke and flip and again roast it.
It will take approx 60-85 min to get roasted.
Pour little stoke over the chicken occasionally.
If you are not using v rack,just change sides of chicken as it is being cooked.
